If you love pizza but want to watch your diet, this vegetable pizza recipe is for you. It’s a colorful pizza covered in veggies and cheese so go ahead and indulge!

How To Make Vegetable Pizza

  • 16 oz frozen whole wheat bread dough (thawed)
  • 1 small zucchini (chopped)
  • 1 small yellow summer squash (chopped)
  • 1/4 tsp red pepper (crushed )
  • 2 garlic cloves (minced)
  • 1 tbsp olive oil
  • 2 cups mozzarella cheese (shredded)
  • 2 medium red tomatoes (thinly sliced; and/or yellow tomatoes)
  • 2 tbsp Parmesan (grated, or Romano cheese)
  1. On a lightly floured surface, roll bread dough into a 14-inch circle. 

  2. Transfer to a greased cookie sheet or 13-inch pizza pan.

  3. Build up the edges slightly. Prick the base of the pizza dough generously with a fork.

  4. Bake at 375 degrees for 20-25 minutes or until light brown.

  5. In a large skillet, cook zucchini, summer squash, crushed red pepper and garlic in hot olive oil for about 5 minutes or until veggies are almost tender. Drain.

  6. Sprinkle 1/2 mozzarella cheese over hot crust. Arrange tomato slices in a circular pattern atop cheese.

  7. Top with vegetable mixture. Sprinkle with remaining mozzarella cheese and parmesan cheese. 

  8. Bake for about 12 minutes more or until cheese melts and pizza is heated through. Serve.
