Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced pineapple
  • 1/4 cup diced red onion

Instructions

  1. In a bowl, combine pineapple juice, orange juice, lime juice, minced garlic, chili powder, smoked paprika, cumin, oregano, salt, black pepper, cinnamon, and cayenne pepper. Mix well.

  2. Place chicken breasts in a ziplock bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours or overnight.

  3. Preheat grill to medium-high heat.

  4. Remove chicken from the marinade, allowing excess marinade to drip off. Grill chicken for about 6-8 minutes per side, or until cooked through and slightly charred.

  5. Remove chicken from the grill and let it rest for a few minutes.

  6. Slice the grilled chicken and serve it with chopped fresh cilantro, diced pineapple, and diced red onion.

  7. Enjoy!
