How To Make Penne Pasta Salad

Ingredients
- 8 ounces penne pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

Cook the penne pasta according to package instructions. Drain and rinse with cold water.

In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, feta cheese, and fresh basil.

In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

Pour the dressing over the pasta salad and toss to combine.

Chill the salad in the refrigerator for at least 1 hour before serving.
