  • 1 pound flank steak
  • 4 bolillo rolls or French bread rolls
  • 1/2 cup mayonnaise
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 1/2 cup refried beans
  • 1/4 cup pickled jalapenos
  • 4 slices of cheese (such as Monterey Jack or queso blanco)
  • Salt and pepper to taste


  1. Preheat your grill or grill pan over medium-high heat.

  2. Season the flank steak with salt and pepper on both sides.

  3. Grill the steak for about 4-5 minutes per side, or until it reaches your desired doneness. Let it rest for a few minutes before slicing.

  4. Slice the bolillo rolls in half lengthwise and spread mayonnaise on both sides.

  5. Spread a layer of refried beans on the bottom half of each roll.

  6. Top with sliced steak, avocado, tomato, pickled jalapenos, and a slice of cheese.

  7. Place the tortas on the grill or in a panini press and cook for 3-4 minutes, or until the cheese has melted and the bread is crispy.
