Ingredients

  • 2 lb pork loin
  • 1 cup apple butter
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the pork loin with salt, pepper, garlic powder, onion powder, and dried thyme.

  3. Heat olive oil in a large oven-safe skillet over medium-high heat.

  4. Sear the pork loin on all sides until browned, about 2-3 minutes per side.

  5. Remove the pork loin from the skillet and spread the apple butter evenly over the top and sides.

  6. Place the pork loin back into the skillet and transfer it to the preheated oven.

  7. Roast for about 45-50 minutes, or until the internal temperature reaches 145°F (63°C).

  8. Remove from the oven and let it rest for 10 minutes before slicing.

  9. Serve the apple butter pork loin with pan juices.
