  • 1 lb gizzards
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste


  1. In a large pot, heat some oil and cook the onions and garlic until they are translucent.

  2. Add the gizzards and cook until browned on all sides.

  3. Add the carrots, potatoes, and bell pepper. Stir and cook for a few minutes.

  4. Pour in the chicken broth and add the thyme, paprika, cayenne pepper, salt, and pepper. Stir well.

  5. Cover the pot and simmer for 1 hour or until the gizzards are tender.
