Ingredients

  • 2 delicata squash, halved and seeds removed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the delicata squash halves cut-side down in a microwave-safe dish.

  2. Pour about 1/4 cup of water into the dish to create steam.

  3. Microwave on high for 7 minutes or until the squash is tender when pierced with a fork.

  4. Carefully remove the dish from the microwave and drain the water.

  5. Drizzle the olive oil over the squash halves and sprinkle with garlic powder, paprika, salt, and pepper.

  6. Return the dish to the microwave and cook on high for an additional 7 minutes or until the squash is fully cooked and slightly caramelized.

  7. Remove from the microwave and let it cool for a few minutes.

  8. Garnish with chopped parsley before serving.
