Ingredients

  • 5 pounds of live crawfish
  • 8 ears of corn, husked and halved
  • 12 baby potatoes
  • 1 onion, quartered
  • 4 garlic cloves, minced
  • 4 lemons, halved
  • 3 bay leaves
  • 3 tablespoons of Cajun seasoning
  • 2 tablespoons of paprika
  • 2 tablespoons of salt
  • 1 tablespoon of black pepper
  • 1 tablespoon of cayenne pepper
  • Hot sauce, for serving

Instructions

  1. In a large stockpot, bring water to a boil and add the garlic, onions, bay leaves, and seasonings.

  2. Squeeze the juice of 2 lemons into the pot and add the lemon halves as well.

  3. Add the potatoes and boil for 10 minutes, then add the corn and boil for another 5 minutes.

  4. Add the crawfish and boil for 5-8 minutes until they turn bright red.

  5. Drain the boil and transfer to a serving platter.

  6. Serve hot with hot sauce on the side.
