Ingredients

  • 1 cup Arborio rice
  • 2 ½ cups vegetable broth
  • ¼ cup grated Parmesan cheese
  • 1 tsp black pepper
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • Salt, to taste

Instructions

  1. In a large saucepan, melt the butter over medium heat. Add the minced garlic and diced onion, and sauté until onions are translucent.

  2. Add the Arborio rice to the saucepan and stir to coat the grains with the butter mixture.

  3. Stir in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

  4. Once the rice is cooked, remove from heat and stir in the grated Parmesan cheese and black pepper. Season with salt to taste.

  5. Let the rice pilaf sit for a few minutes to allow the flavors to meld together before serving.
