Ingredients

  • 8 oz oyster mushrooms, sliced
  • 8 oz fettuccine pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

  2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

  3. Add the sliced oyster mushrooms to the skillet and cook until they soften and release their juices, about 5 minutes.

  4. Pour in the vegetable broth and bring to a simmer. Cook for another 5 minutes, or until the broth has reduced by half.

  5. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste. Cook for an additional 2-3 minutes, or until the sauce thickens slightly.

  6. Add the cooked fettuccine pasta to the skillet and toss until coated in the creamy mushroom sauce.

  7. Remove from heat and garnish with fresh parsley.

  8. Serve hot and enjoy!
