How To Make Salmon & Lemon Rice Pastry Parcel

Ingredients

  • 4 salmon fillets
  • 1 cup of rice
  • 2 lemons, zested and juiced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1 package of ready-made puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Cook the rice according to package instructions, then stir in the lemon zest, lemon juice, olive oil, salt, and pepper.

  3. Season the salmon fillets with salt and pepper.

  4. Roll out the puff pastry onto a lightly floured surface and cut into 4 equal-sized squares.

  5. Divide the lemon rice mixture among the squares, placing it in the center of each square.

  6. Place a salmon fillet on top of the rice mixture.

  7. Fold the pastry over the salmon and rice, sealing the edges with some beaten egg.

  8. Brush the tops of the pastry parcels with the remaining beaten egg.

  9. Place the parcels on a baking sheet lined with parchment paper.

  10. Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and the salmon is cooked through.

  11. Serve hot and enjoy!
