Ingredients

  • 4 Walleye fillets
  • Salt and pepper, to taste
  • 1/2 cup seasoned flour
  • 2 tbsp olive oil
  • 1/4 cup dry white wine
  • 1/4 cup chicken broth
  • Juice of 1 lemon
  • 2 tbsp butter
  • 2 tbsp capers, drained
  • 2 tbsp chopped parsley

Instructions

  1. Season walleye fillets with salt and pepper.

  2. Coat with seasoned flour, shaking off the excess.

  3. Heat olive oil in a large pan over medium-high heat.

  4. Add fillets and cook until browned on both sides, about 3 minutes per side.

  5. Remove fillets from the pan and set aside.

  6. Add wine, chicken broth, lemon juice, and butter to the same pan.

  7. Bring to a boil, stirring constantly to scrape up any browned bits.

  8. Add capers and cook for 1 more minute.

  9. Pour sauce over walleye fillets and sprinkle with chopped parsley.
