How To Make Mackerel Croquettes Recipe

Crispy on the outside, soft and flavorful on the inside, these mackerel croquettes are perfect for a quick and delicious meal.

Ingredients

  • 2 cans of mackerel fillets in oil, drained and flaked
  • 2 cups of mashed potatoes
  • 1/4 cup of chopped parsley
  • 1/4 cup of chopped scallions
  • 2 cloves of garlic, minced
  • 1/2 cup of breadcrumbs
  • 2 eggs, lightly beaten
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine the mackerel fillets, mashed potatoes, parsley, scallions, garlic, breadcrumbs, and beaten eggs. Season with salt and pepper to taste.

  2. Mix all the ingredients together until fully combined.

  3. Using your hands, form the mixture into small, round balls.

  4. Heat vegetable oil in a pan over medium-high heat.

  5. Carefully place the croquettes in the hot oil and fry until golden brown (about 2-3 minutes per side).

  6. Once fried, remove the croquettes from the pan and place them onto a paper towel-lined plate.

  7. Serve hot and enjoy!
