Ingredients

  • 1 lb. fresh mackerel fillets
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup mayonnaise
  • 2 tbsp. lime juice
  • 1 tbsp. olive oil
  • salt and pepper to taste

Instructions

  1. Preheat grill or grill pan to medium-high heat.

  2. Rub mackerel fillets with olive oil and season with salt and pepper.

  3. Grill fillets for 3-4 minutes on each side until cooked through.

  4. In a small bowl, whisk together mayonnaise and lime juice to make the sauce.

  5. Assemble tacos with grilled mackerel, shredded cabbage, diced tomatoes, and fresh cilantro.

  6. Drizzle sauce over the top and serve immediately.
