Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 small cabbage, thinly sliced
  • 1 can white beans, drained and rinsed
  • 2 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 white fish fillets
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until fragrant.

  2. Add cabbage to the pot and cook until wilted, about 5 minutes.

  3. Stir in white beans, vegetable broth, dried thyme, paprika, salt, and pepper. Bring to a simmer.

  4. Place white fish fillets on top of the cabbage mixture. Cover and cook for 12-15 minutes, or until fish is cooked through.

  5. Serve hot, garnished with fresh parsley.
