  • 4 fresh mackerel fillets
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat a large skillet over medium-high heat and add the olive oil.

  2. Season the mackerel fillets with salt and pepper on both sides.

  3. Once the skillet is hot, add the fillets and cook for 3-4 minutes on each side or until crispy and fully cooked.

  4. Remove the fillets from the skillet and place them on a paper towel to remove any excess oil.

  5. Squeeze lemon juice over the fillets and top with fresh parsley.

  6. Serve immediately and enjoy!
