Ingredients

  • 4 lemon sole fillets
  • 2 lemons, zest and juice
  • 2 tbsp capers, drained
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, combine the lemon zest, lemon juice, capers, parsley, olive oil, salt, and pepper to make the lemon and caper paste.

  3. Place the lemon sole fillets on a baking sheet lined with parchment paper.

  4. Spread the lemon and caper paste evenly over each fillet.

  5. Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.

  6. Serve hot and enjoy!
