  • 1 lb white fish fillets
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • 1 bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 8 small flour tortillas
  • Optional toppings: sour cream, salsa, avocado, cilantro

Instructions

  1. In a small bowl, combine chili powder, paprika, cumin, garlic powder, onion powder, salt, and black pepper.

  2. Rub the spice mixture all over the fish fillets, coating them evenly. Let them marinate for at least 10 minutes.

  3. Heat olive oil in a large skillet over medium-high heat. Add the fish fillets and cook for 3-4 minutes per side, or until cooked through and flaky.

  4. Remove the fish from the skillet and let it rest for a few minutes. Then, use a fork to break it into smaller pieces.

  5. In the same skillet, add the bell pepper and red onion. Cook until they are softened and lightly charred, about 5 minutes.

  6. Warm the tortillas in a separate skillet or oven.

  7. Assemble the fajitas by placing the fish, bell pepper, and onion on the tortillas. Squeeze fresh lime juice over the top.

  8. Serve with optional toppings such as sour cream, salsa, avocado, and cilantro.
