Ingredients

  • 1 pound fresh mackerel, filleted and diced into 1-inch pieces
  • 1 cup lime juice (about 8 limes)
  • 1 small red onion, thinly sliced
  • 2 jalapeños, seeded and thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt
  • Tortilla chips, for serving

Instructions

  1. In a large bowl, combine the mackerel, lime juice, red onion, jalapeños, cilantro, and salt. Stir well to combine.

  2. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or until the mackerel is fully cooked by the acidity of the lime juice.

  3. Serve the ceviche cold with tortilla chips.
