Ingredients

  • 4 fish fillets (such as cod or tilapia)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried herbs (such as thyme, oregano, or parsley)
  • Zest of 1 lemon
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a shallow dish, combine the breadcrumbs, Parmesan cheese, dried herbs, lemon zest, salt, and pepper.

  3. Dip each fish fillet into the breadcrumb mixture, pressing gently to adhere the crust to the fish.

  4. Heat olive oil in a large skillet over medium-high heat. Place the coated fish fillets in the skillet and cook for 2-3 minutes on each side, until golden brown.

  5. Transfer the cooked fish fillets to the prepared baking sheet and place in the preheated oven. Bake for an additional 10-12 minutes, or until the fish is cooked through and the crust is crispy.

  6. Serve the lemon, herb & Parmesan crusted fish with lemon wedges and your choice of sides.
