Ingredients

  • 2 cans of sardines in oil, drained and flaked
  • 4 boiled eggs, chopped
  • 1/2 red onion, thinly sliced
  • 1/4 cup of fresh parsley, chopped
  • 2 tbsp of lemon juice
  • 2 tbsp of olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine sardines, chopped eggs, sliced red onion, and parsley.

  2. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss until well combined.

  4. Serve chilled, garnished with extra parsley.
