  • 4 monkfish fillets
  • 8 strips of bacon
  • Salt and pepper to taste
  • Fresh lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Wrap each monkfish fillet tightly with 2 strips of bacon, securing with toothpicks if needed. Season with salt and pepper.

  3. Place the wrapped fillets on the prepared baking sheet and bake for 20-25 minutes, or until the bacon is crispy and the fish is cooked through.

  4. Remove the toothpicks before serving and garnish with fresh lemon wedges.
