  • 4 flounder fillets
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 mangoes, diced
  • 1 small red onion, diced
  • 1 jalapeño, seeded and diced
  • 1 lime, juiced
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 400 degrees F.

  2. Season the flounder fillets with garlic powder, smoked paprika, salt, and black pepper.

  3. Heat 2 tbsp olive oil in a large skillet over medium heat.

  4. Add the flounder fillets and cook until golden brown, about 3 minutes on each side.

  5. Transfer the skillet to the preheated oven and bake for 5-7 minutes, until fully cooked.

  6. In a bowl, combine diced mangoes, red onion, jalapeño, lime juice, and cilantro. Mix well.

  7. Serve the flounder fillets with the mango salsa on top.
