How To Make Mackerel and Potato Casserole Recipe

A hearty baked casserole dish, filled with flaky mackerel and tender potatoes, perfect for a satisfying dinner.

Ingredients

  • 4 medium potatoes, thinly sliced
  • 2 medium onions, thinly sliced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cans of mackerel in olive oil, drained
  • 1/4 cup parsley, chopped
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat oven to 375°F.

  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened, about 5 minutes.

  3. Add potatoes, thyme, paprika, salt, and black pepper. Sauté for 10 minutes until potatoes are tender.

  4. Remove skillet from heat and fold in drained mackerel, parsley, and breadcrumbs.

  5. Pour mixture into a greased 9×13-inch baking dish, and bake for 25 minutes until golden brown on top.
