Ingredients

  • 4 fillets of white fish (such as cod or tilapia)
  • 1.5 lbs new potatoes, halved
  • 4 spring onions, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a large pot of salted water, boil the new potatoes until tender. Drain and set aside.

  3. In a separate pan, heat the olive oil over medium heat. Add the spring onions and garlic, and sauté until softened.

  4. Meanwhile, season the fish fillets with salt, pepper, and lemon juice.

  5. Grill the fish fillets for about 4 minutes on each side or until cooked through.

  6. In a bowl, gently crush the cooked new potatoes with a fork. Stir in the sautéed spring onions and garlic.

  7. Serve the grilled fish on top of the new potato crush. Garnish with additional lemon slices and spring onions, if desired.
