Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 2 cups low-sodium vegetable broth
  • 1 cup almond milk
  • 1 cup frozen corn kernels
  • 1 cup diced carrots
  • 1 cup diced zucchini
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until they become soft and fragrant.

  2. Add the diced potatoes to the pot and cook for a few minutes, stirring occasionally.

  3. Pour in the vegetable broth and almond milk, and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 10 minutes or until the potatoes are fork-tender.

  4. Add the frozen corn, diced carrots, diced zucchini, dried thyme, salt, and pepper to the pot. Cook for another 10 minutes or until all the vegetables are cooked through.

  5. Taste and adjust seasonings if needed. Serve hot, garnished with fresh parsley.
