  • 4 pollock fillets
  • 1 cup breadcrumbs
  • 4 anchovy fillets, finely chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zest and juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix together the breadcrumbs, chopped anchovies, olive oil, minced garlic, lemon zest, salt, and pepper.

  3. Place the pollock fillets on a baking sheet lined with parchment paper.

  4. Spread a generous amount of the breadcrumb mixture over each fillet, pressing it down gently.

  5. Drizzle the lemon juice over the fillets.

  6. Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.

  7. Serve the baked pollock topped with fresh parsley and accompanied by lemon wedges.
