
How To Make Baked Pollock with Anchovy Crumbs

Ingredients
- 4 pollock fillets
- 1 cup breadcrumbs
- 4 anchovy fillets, finely chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, zest and juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix together the breadcrumbs, chopped anchovies, olive oil, minced garlic, lemon zest, salt, and pepper.

Place the pollock fillets on a baking sheet lined with parchment paper.

Spread a generous amount of the breadcrumb mixture over each fillet, pressing it down gently.

Drizzle the lemon juice over the fillets.

Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.

Serve the baked pollock topped with fresh parsley and accompanied by lemon wedges.
