Ingredients

  • 4 lbs of brisket
  • 2 tbsp of kosher salt
  • 2 tbsp of black pepper
  • 1 tbsp of paprika
  • 1 tbsp of garlic powder
  • 1 tbsp of onion powder
  • 1 tsp of cayenne pepper
  • Wood chips (hickory or mesquite) for smoking

Instructions

  1. Preheat your smoker to 225°F.

  2. In a small bowl, combine the kosher salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper to make a rub.

  3. Pat the brisket dry with a paper towel and generously apply the rub all over the brisket.

  4. Place the brisket on the smoker, fat side up, and close the lid.

  5. Smoke the brisket for 6-8 hours, or until the internal temperature reaches 195°F.

  6. Remove the brisket from the smoker and wrap it tightly in foil. Let it rest for 1 hour.

  7. Slice the brisket against the grain and serve.
