Serves:

Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 4 onions, sliced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 cups red wine
  • 1 cup beef broth
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add the beef stew meat and brown on all sides. Remove from pot and set aside.

  3. In the same pot, add the onions and garlic. Cook until onions are soft and golden brown.

  4. Stir in the tomato paste and cook for another minute.

  5. Return the beef to the pot and pour in the red wine and beef broth.

  6. Add the bay leaves, cinnamon stick, dried oregano, dried thyme, salt, and pepper. Stir well to combine.

  7. Bring the stew to a simmer, then cover and let it cook on low heat for 2 hours, or until the beef is tender.

  8. Serve the beef stifado hot, garnished with fresh herbs if desired.
