Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked rice
  • 1 cup canned black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Fresh cilantro, for garnish

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the diced onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender.

  3. Stir in the chili powder, cumin powder, paprika, salt, and black pepper. Cook for an additional minute.

  4. Add the cooked rice and black beans to the skillet. Stir until well combined and heated through.

  5. Warm the flour tortillas in the microwave or on a skillet.

  6. Spoon the beef and rice mixture onto the center of each tortilla. Top with shredded cheddar cheese.

  7. Fold the sides of the tortillas over the filling, then roll to form a burrito.

  8. In a separate small bowl, mix together the sour cream and salsa.

  9. Serve the burritos with a dollop of the sour cream and salsa mixture. Garnish with fresh cilantro.
