Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno, seeds removed and diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp cocoa powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapenos

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess grease.

  2. Add the onion, garlic, red bell pepper, and jalapeno to the pot. Cook until the vegetables have softened, about 5 minutes.

  3. Stir in the diced tomatoes, kidney beans, tomato paste, beef broth, chili powder, cumin, paprika, oregano, cocoa powder, salt, and pepper. Bring to a simmer.

  4. Reduce the heat to low and let the chili simmer for 1.5-2 hours, stirring occasionally.

  5. Serve the chili hot, topped with your choice of toppings, and enjoy!
