Ingredients

  • 1 lb beef, cubed
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado

Instructions

  1. In a large pot or Dutch oven, heat some oil over medium heat. Add the beef and cook until browned. Remove the beef from the pot and set aside.

  2. In the same pot, add the onion, garlic, jalapeno, and red bell pepper. Cook until the vegetables are softened.

  3. Add the diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, paprika, salt, and pepper. Stir to combine.

  4. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 2 hours, stirring occasionally.

  5. Serve the Mexican Beef Chilli hot, garnished with your choice of toppings. Enjoy!
