Ingredients

  • 1.5 lbs beef stew meat, diced
  • 1 large onion, chopped
  • 2 bell peppers, diced
  • 3 cloves of garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add beef and cook until browned on all sides. Remove beef from pot and set aside.

  2. In the same pot, add onion, bell peppers, and garlic. Cook until vegetables are softened, about 5 minutes.

  3. Return beef to the pot and add chili powder, cumin, paprika, oregano, salt, and black pepper. Stir well to coat the meat and vegetables with the spices.

  4. Add kidney beans and diced tomatoes with their juice to the pot. Stir everything together.

  5. Bring the chili to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, stirring occasionally.

  6. Serve the chunky beef chilli hot, garnished with your choice of toppings.
