Ingredients

  • 1 lb shaved beef
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp paprika
  • Salt, to taste
  • 8 fajita size tortillas
  • Optional toppings: sour cream, guacamole, cilantro, lime wedges

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add shaved beef and cook until browned, about 3-4 minutes.

  2. Stir in onion, garlic, and sliced peppers. Add cumin, chili powder, paprika, and salt. Cook for another 5-7 minutes until vegetables are tender and beef is well coated with spices.

  3. Warm tortillas in the oven or microwave.

  4. Assemble fajitas by adding beef and vegetable mixture into each tortilla. Top with desired toppings.

  5. Serve and enjoy!
