Ingredients

  • 1 lb shaved beef
  • 1 can black beans, drained and rinsed
  • 1 red onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 4 large tortillas

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.

  2. Add shaved beef, red onion, red bell pepper, and garlic. Cook until beef is browned and vegetables are tender.

  3. Add black beans, chili powder, cumin, salt, and pepper. Stir until well combined.

  4. Warm tortillas in the microwave for 15 seconds.

  5. Spoon beef and black bean mixture onto each tortilla and roll up tightly.

  6. Serve hot and enjoy!
