How To Make Sustainable Fish Pie

Ingredients

  • 500g sustainable white fish fillets, such as cod or haddock
  • 200g smoked haddock fillets
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 250ml fish stock
  • 200ml milk
  • 2 tbsp plain flour
  • 2 tbsp butter
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1kg potatoes, peeled and chopped
  • 50g butter
  • 100ml milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Place the sustainable white fish fillets and smoked haddock fillets in a large ovenproof dish.

  3. In a separate saucepan, melt the butter over medium heat. Add the onion and garlic and cook until softened.

  4. Stir in the flour and cook for 1 minute. Gradually whisk in the fish stock and milk until smooth.

  5. Simmer for 5 minutes until the sauce has thickened. Remove from heat and stir in the chopped parsley and dill.

  6. Pour the sauce over the fish fillets in the ovenproof dish.

  7. In a large pot, boil the potatoes until tender. Drain and mash with butter and milk until creamy. Season with salt and pepper.

  8. Spoon the mashed potatoes over the fish and sauce, and smooth the top with a fork.

  9. Bake in the preheated oven for 30-40 minutes, or until the top is golden and the fish is cooked through.

  10. Serve hot and enjoy the sustainable fish pie!
