Ingredients

  • 4 walleye (pickerel) fillets
  • 1/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 2 tbsp vegetable oil
  • Lemon wedges, for serving

Instructions

  1. In a shallow dish, mix together flour, cornmeal, salt, black pepper, paprika, and cayenne pepper.

  2. Coat each walleye (pickerel) fillet in the flour mixture, shaking off any excess.

  3. Heat vegetable oil in a large skillet over medium heat.

  4. Carefully place the coated fillets into the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through.

  5. Remove the fillets from the skillet and place them on a paper towel-lined plate to drain excess oil.

  6. Serve the Canadian walleye (pickerel) fillets hot with lemon wedges on the side.
