How To Make Crunchy Cheesy Fish and Spinach Casserole

Ingredients

  • 4 fish fillets (such as cod or tilapia)
  • 4 cups fresh spinach leaves
  • 1 cup shredded cheddar cheese
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.

  2. Season the fish fillets with salt, pepper, and garlic powder on both sides.

  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook the fish fillets for 3-4 minutes on each side, until they are lightly browned and cooked through. Remove from the skillet and set aside.

  4. In the same skillet, add another tablespoon of olive oil and the spinach leaves. Sauté until the spinach wilts and reduces in size.

  5. Place the cooked fish fillets at the bottom of the greased baking dish. Top with the sautéed spinach.

  6. In a small bowl, mix together the shredded cheddar cheese, panko breadcrumbs, grated Parmesan cheese, and remaining olive oil. Sprinkle this mixture evenly over the fish and spinach.

  7. Bake in the preheated oven for 20-25 minutes, or until the topping is golden and crispy.

  8. Serve hot and enjoy!
