  • 1 lb fresh fish fillets, cut into chunks
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, sliced
  • 1 cup diced tomatoes
  • 2 cups fish or vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground thyme
  • 1/2 tsp cayenne pepper
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, bell pepper, and carrot. Cook for about 5 minutes until the vegetables are slightly softened.

  2. Add the diced tomatoes, fish broth, coconut milk, cumin, paprika, thyme, and cayenne pepper to the pot. Stir well to combine.

  3. Bring the soup to a simmer and let it cook for 20 minutes, allowing the flavors to meld together.

  4. Add the fish chunks and simmer for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. Stir in the lime juice and season the soup with salt and pepper to taste.

  6. Serve the Caribbean Fish Soup hot, garnished with fresh cilantro.
