  • 4 haddock fillets
  • 1 cup crab meat
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, combine the crab meat, breadcrumbs, Parmesan cheese, mayonnaise, parsley, lemon juice, Old Bay seasoning, salt, and pepper.

  3. Lay the haddock fillets on a baking sheet lined with parchment paper.

  4. Spoon the crab mixture onto each fillet, evenly distributing it.

  5. Roll up the fillets and secure with toothpicks if needed.

  6. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and the filling is golden brown.

  7. Serve the crab-stuffed haddock hot with your choice of sides. Enjoy!
