Ingredients

  • 1 lb of scallops
  • 4 tbsp of butter
  • 4 cloves of garlic, minced
  • 1/2 cup of white wine
  • 1/4 cup of lemon juice
  • 1/4 cup of chopped parsley
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry the scallops. Season with salt and pepper.

  2. In a large skillet, melt butter over medium-high heat. Add minced garlic and cook until fragrant.

  3. Add scallops to the skillet and cook for 2-3 minutes on each side until golden brown.

  4. Remove the scallops from the skillet and set aside.

  5. In the same skillet, add white wine and lemon juice. Bring to a simmer and cook for 2 minutes.

  6. Stir in chopped parsley and return the scallops to the skillet. Cook for an additional 2 minutes, until the scallops are fully cooked and coated in the sauce.

  7. Serve the scallops scampi over a bed of pasta or with crusty bread. Enjoy!
