Ingredients

  • 4 lingcod fillets
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a shallow dish, combine the panko breadcrumbs, grated Parmesan, chopped parsley, garlic powder, paprika, salt, and pepper.

  3. Pat dry the lingcod fillets with a paper towel, then dip each fillet into the breadcrumb mixture, pressing gently to adhere the crust.

  4. Heat the olive oil in a large skillet over medium-high heat. Place the coated fillets in the skillet and cook for 2-3 minutes on each side, until golden brown and crispy.

  5. Transfer the skillet to the preheated oven and bake for an additional 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.

  6. Remove from the oven and let the lingcod rest for a few minutes before serving.

  7. Serve the pan-seared and crusted lingcod fillets with your choice of sides.
