Ingredients

  • 2 pounds of fresh mussels, cleaned and debearded
  • 1 cup of white wine
  • 1/2 cup of chicken or vegetable broth
  • 2 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons of butter
  • 1/4 cup of chopped fresh parsley
  • 1/4 teaspoon of red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the garlic and onion and sauté until softened.

  2. Pour in the white wine and broth, and bring to a simmer.

  3. Add the mussels to the pot and cover. Cook for 5-7 minutes or until the mussels have opened.

  4. Remove the mussels from the pot and set aside. Discard any unopened mussels.

  5. Increase the heat to high and boil the remaining broth for 2-3 minutes to reduce slightly.

  6. Season the broth with red pepper flakes, salt, and pepper.

  7. Return the mussels to the pot and toss to coat them in the broth.

  8. Sprinkle with chopped parsley and serve hot.
