  • 4 steelhead trout fillets
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Lemon slices, for serving

Instructions

  1. Preheat your smoker to 225°F (107°C) and soak your wood chips according to the smoker manufacturer’s instructions.

  2. Rinse the steelhead trout fillets under cold water and pat dry with paper towels.

  3. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper to create a marinade.

  4. Brush the marinade generously onto both sides of the steelhead trout fillets.

  5. Place the fillets onto the smoker grates and close the lid. Smoke the trout for about 45 minutes, or until they reach an internal temperature of 145°F (63°C).

  6. Remove the smoked trout from the smoker and let them rest for a few minutes before serving.

  7. Serve the smoked steelhead trout with lemon slices for extra freshness and acidity.
