Ingredients

  • 4 whole red snappers, scaled and cleaned
  • 2 tablespoons of Jamaican jerk seasoning
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 cup of all-purpose flour
  • Vegetable oil, for frying
  • Lime wedges, for serving

Instructions

  1. Rinse the snappers under cold water and pat dry with paper towels.

  2. Make diagonal cuts on each side of the snapper to allow for even cooking.

  3. In a small bowl, combine the jerk seasoning, salt, and black pepper. Rub the mixture all over the snappers, inside and out.

  4. In a shallow dish, place the flour and coat each snapper with a generous amount of flour, pressing it into the skin for better adhesion.

  5. In a large frying pan, heat enough vegetable oil to cover the bottom of the pan over medium-high heat.

  6. Carefully place the snappers in the pan, taking care not to overcrowd. Fry each side for about 5-7 minutes or until golden brown and crispy.

  7. Transfer the fried snappers to a paper towel-lined plate to absorb excess oil.

  8. Serve the Jamaican fried snappers hot with lime wedges on the side.
