Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup roasted almonds, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper and drizzle with 1 tbsp of olive oil. Season with salt and pepper. Bake for 12-15 minutes, or until the salmon is cooked through.

  2. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, avocado, red onion, and roasted almonds.

  3. In a small bowl, whisk together the lemon juice, remaining olive oil, salt, and pepper.

  4. Once the salmon is cooked, let it cool for a few minutes before flaking it into bite-sized pieces.

  5. Add the flaked salmon to the salad bowl and drizzle with the lemon dressing. Toss gently to combine.

  6. Serve the superhealthy salmon salad immediately and enjoy!
