Ingredients

  • 4 medium potatoes, peeled and cut into bite-sized cubes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 200g smoked salmon, sliced into small pieces
  • 1/2 cup soured cream
  • 2 tbsp chopped fresh dill
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.

  2. In a large bowl, toss the potato cubes with olive oil, salt, and black pepper until well coated.

  3. Spread the potatoes on the prepared baking sheet in a single layer and bake for 20-25 minutes, or until golden and crispy.

  4. Once the potatoes are cooked, remove them from the oven and let them cool slightly.

  5. Top each potato bite with a piece of smoked salmon.

  6. Spoon a small dollop of soured cream on top of the salmon.

  7. Sprinkle with chopped fresh dill.

  8. Serve the salmon and soured cream potato bites with lemon wedges on the side.
