Mussels With White Wine Sauce Recipe

This is one of Julia Child’s best dishes! We steam fresh mussels in a savory mixture of butter, garlic and white wine. Serve diving mussels recipe with a slice of French bread.

Fresh mussels are steamed until cooked and flavored with a garlic butter aroma made more exquisite with white wine.

  • 2 tbs butter
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes, crushed
  • 1 fresh lemon, zested
  • 2 cups dry white wine
  • tsp ground black pepper
  • 2 lbs mussels, cleaned and debearded
  • 1 cup fresh parsley, chopped


  1. In a large stock pot, warm butter over medium heat.
  2. Add in garlic, crushed red pepper and lemon zest.
  3. Cook for 1 minute.
  4. Add wine and ground pepper to pot.
  5. Bring mixture to a boil.

  6. Add mussels and cover.

  7. Boil mussels for 1 minute.
  8. Stir mussels and boil for 2 minutes.

  9. Add parsley to pot.

  10. Cover and boil for an additional 3 minutes or until shells begin to open.

  11. Discard any mussels that do not open. Serve warm.
