Ingredients

  • 2 lbs mussels
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 cup dry white wine
  • 1/2 cup chicken or vegetable broth
  • 1 bay leaf
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Scrub the mussels under cold water to remove any dirt or debris. Discard any mussels that are cracked or open.

  2. In a large pot, melt the butter over medium heat. Add the garlic and onion, and cook until softened and fragrant.

  3. Add the white wine, chicken or vegetable broth, bay leaf, and season with salt and pepper. Bring to a simmer.

  4. Add the mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

  5. Remove the pot from heat and sprinkle the chopped parsley over the mussels.

  6. Serve the mussels with crusty bread to soak up the flavorful broth.
