Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 ripe mango, peeled and diced
  • 1/2 red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1 jalapeno pepper, seeded and minced
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill or preheat the oven to 400°F (200°C).

  2. Season the salmon fillets with salt and pepper. Grill or bake for about 12 minutes, or until the salmon is cooked through.

  3. In a medium bowl, combine the diced mango, red onion, cherry tomatoes, jalapeno pepper, lime juice, and fresh cilantro.

  4. Season the salsa with salt and pepper, to taste.

  5. Serve the grilled or baked salmon fillets topped with the mango salsa.
